Sopapilla - New Mexico

Ingredients
- 2 C flour
- 1/2 Tbsp. baking powder
- 1/2 tsp salt
- 1/2 Tbsp. sugar
- 1 Tbsp. vegetable oil
- 1 C warm water
- Vegetable oil for frying
Preparation
- Whisk flour, baking powder, salt and sugar together
- Whisk in 1 Tbsp vegetable oil
- Gently add warm water and knead dough until it's smooth
- Only takes 1 or two minutes with mixer and dough hook
- Place on lightly floured surface and continue until dough is smooth
- divide dough in half, and seal each half in zipper lock bag to rest while the oil is heating for frying.
- Heat oil to 340 to 350 degrees.
- Oil should be 2" deep
- Remove one portion of dough and roll out on clean, flourless surface to 1/2" thick
- Use pizza cutter to cut the dough into 4 x 4 squares for resturaunt look.
- place plastic wrap over rolled dough (dough has to stay moist)
- Gently place individual square of dough into hot oil
- It hsoud egin to puff within 5 seconds.
- Carefully splash oil over the top, this really seems to help sopapilla puff.
- once it's finished puffing up, fry until it reaches a light golden brown on both sides.
- Place in large bowl lined with paper towels
- repeat
- serve with honey.
