Sopapilla - New Mexico

Ingredients

Preparation

  1. Whisk flour, baking powder, salt and sugar together
  2. Whisk in 1 Tbsp vegetable oil
  3. Gently add warm water and knead dough until it's smooth
  4. Only takes 1 or two minutes with mixer and dough hook
  5. Place on lightly floured surface and continue until dough is smooth
  6. divide dough in half, and seal each half in zipper lock bag to rest while the oil is heating for frying.
  7. Heat oil to 340 to 350 degrees.
  8. Oil should be 2" deep
  9. Remove one portion of dough and roll out on clean, flourless surface to 1/2" thick
  10. Use pizza cutter to cut the dough into 4 x 4 squares for resturaunt look.
  11. place plastic wrap over rolled dough (dough has to stay moist)
  12. Gently place individual square of dough into hot oil
  13. It hsoud egin to puff within 5 seconds.
  14. Carefully splash oil over the top, this really seems to help sopapilla puff.
  15. once it's finished puffing up, fry until it reaches a light golden brown on both sides.
  16. Place in large bowl lined with paper towels
  17. repeat
  18. serve with honey.
